I can't believe it already is october, time flies by so fast! I feel like it was only a few weeks ago when summer break started but actually fall break is almost over now...
That's why I thought it would be the perfect time for a fall inspired post!
To be honest, I often catch myelf complaining about fall, whether it 's about the cold and (especially in Hamburg) often rainy wheather or about the fact that the days get shorter beacuse it's getting dark so early. But let's face it - we can't change that, so let's stick to the beautiful side of fall and focus on all the positive things!
Because there definetly are a lot of things I love about fall.
First of all I love, love, love the look of trees in autumn when their leaves turn red which is why I love going for a walk or a run or just being outside and enjoying all the colours.
Another thing I love to do during autumn is to have cozy evenings, cuddled up in bed with a cozy blanket, lots and lots of pillows, a hot drink, a lot of candles and reading a book or watching a movie. Seriously, this is one of the best ways to calm down after a busy week and having a relaxed eveing.
Furthermore I love decorating my room with fall inspired decor because I think it makes your room look so cozy and coziness in the cold months of the year is totally essential for me.
Oh - and of course not to forget: pumpkin season and baking season, because I totally love baking in the cold months of the year!
Which leads me to the recipe I want to share with you: Healthy and vegan and delicious pumpkin brownies!
They are a perfect snack for a cozy evening as I described and the best is that you don't even have to feel bad for eating them, because they are super healthy and contain only good and nutritious ingredients.
You will need:
- 1 1/2 Cup of pumpkin puree
- 1/2 Cup of oat flour
- 1/3 Cup of raw cacao powder
- 1/3 Cup of maple syrup
- 1 tbsp of coconut oil
- 1 tsp of baking powder
Instructions:
First of all, start with preparing the pumpkin puree, for which you have to boil your pumpkin and blend it afterwards in blender or food processor - or, if you don't own one, you can just cut the pumpkin into small pieces and mash it with a fork, this works totally fine as well.
Then add the other wet ingredients to the pumpkin puree and mix until everthing is well combined.
In another bowl, combine the rest of the ingredients and give it a stir. Then add the wet ingredients to the dry ones and mix once again until you have a smooth brownie batter.
Subsequently pour the batter into a cake pan and bake the brownies in the oven at 180°C for about 20 to 30 minutes.
Enjoy!
